Ingredients. 2 5-ounce cans tuna in olive oil, undrained. 2 stalks celery diced. 1 cup shoestring potatoes. 2-3 tablespoons onion, finely diced. ½ green bell pepper, finely diced. 1 jalapeno, finely diced. ½ cup avocado lime crema plus 1-2 tablespoon (s)

1 1/2 c. shoestring potatoes. 1/2 tsp. mustard. 1/2 c. salad dressing. 2 tbsp. milk. 4 boiled eggs, chopped. 1 can diced ham or tuna or shrimp. Combine all ingredients and chill. When ready to serve, add 1 1/2 cups shoestring potatoes. Garnish and serve.

Directions. Defrost bag of peas (leave out on the counter for 30-60 minutes, or gently run under cool water in a strainer). Mix mayonnaise and optional vinegar. Finely dice celery and red onion and add to mayonnaise mixture. Fold in peas. Season with salt and pepper to taste. Top with shoestring potatoes prior to serving.

1 c. chopped celery. ¼ c/ finely-chopped onion. 1 (6 ½ oz.) can tuna or chicken. 1 c. carrots, shredded. 1 c. salad dressing. 1 c. canned shoestring potatoes.
