Okinawan Shoyu Miso Pork Quesadillas

Directions: Cut pork into 2 x 1-inch pieces. In a saucepan, brown pork on medium heat. Add garlic and ginger; cook a few minutes longer. Add soy sauce, sugar, and salt. Lower heat, cover, and cook pork, turning pieces every 20 to 30 minutes. Cook for 2 to 2 1/2 hours or until pork is tender. Makes 6 servings.

Okinawan shoyu pork is a traditional Okinawan dish where pork belly is slowly braised in a mixture of soy sauce, sake, mirin, brown sugar, and ginger. Although similar in some respect to the flavors of teriyaki, it's further characterized by its unique melt-in-your-mouth tenderness from hours of gentle simmering.

Once boiling, reduce the heat to medium and simmer for 20 minutes. Remove the pork belly from the liquid and set both aside to cool.
