Transfer chiles and garlic to a high-speed blender. Pour in the water and vinegar, and let stand for 5 minutes to soften. Purée on high, 10 to 20 seconds. Cut pork into 1/2-inch cubes; season cubes with salt and pepper. In a large, heavy pan with lid, brown the cubes well in oil and melted butter. Add the onion and garlic and sauté for about 5 minutes, then drain the fat from the pan. Add the remaining ingredients, cover, and simmer for at least 90 minutes, stirring frequently; add more water.

Directions. Cook chicken with taco seasoning. In the meantime chop up onion. When chicken is cooked, shred with a fork and set aside. Heat up tortillas anddip in enchilada sauce. Then place a small amount of chicken, onion and cheese then roll up. Place in a baking dish and top with a little cheese and bake for 10-15 minutes at 325 degrees.

Instructions. Preheat Oven to 350. Spread 2 tablespoons of enchilada sauce over the entire bottom of a 13 x 9 casserole pan. In a medium bowl, combine the shredded chicken, 1/2 of the sauce, about a cup and a half of sour cream (give or take, depending on how creamy you want them) and 2-3 cups of cheese.

Spray a 9×13-inch baking dish and an 8×8-inch baking dish with cooking spray. Fold the right side of the tortilla halfway over to cover the browned ground beef, diced green chiles, and cheese. Then fold the left side over the top of the right side. Place the folded tortilla in the baking dish folded side down.

Preheat the oven to 350 degrees. Step 2. Prepare the Baking Dish. Because this recipe makes 10 enchiladas, we will need two baking dishes. Spray a 9×13-inch glass baking dish and then a smaller 8×8-inch square baking dish with your favorite cooking spray or oil. You can use any kind of baking pan you have.

Add a thin layer of the green sauce to the baking dish, just enough to coat the bottom. Fill each tortilla with around ⅓ cup of the chicken mixture, then roll the tortilla up and place in the baking dish with the seam-side down. Repeat with the remaining tortillas. Pour the remaining enchilada sauce over top of the enchiladas.

1 large can enchilada sauce (La Victoria is my favorite) 3 cups shredded cheese (I use mexican blend, or a combo of cheddar cheese and monterey jack cheese) 10-16 flour tortillas (8-9" work great. you can even use corn tortillas) 1 Tablespoon olive oil; salt and pepper (to taste, optional) Directions. Preheat oven to 350ºF.
